Butternut Soup and Spicy Creamy Pasta Sauce in one Recipe

Batch cook warm nourishing butternut soup and serve with toasted brioche croutons. For an easy winter pasta, blend with chilli and cream and toss through hot penne.

Recipe Ingredients

BUTTERNUT SOUP

  • 2 x 600g SPAR freshline Butternut Soup Mix
  • Juice of 2 SPAR freshline oranges
  • SPAR sour cream or SPAR yoghurt for serving
  • croutons
  • 1 SPAR Bakery Brioche Buns, Seeded 
  • 2 Tbsp (30ml) SPAR Olive Oil
  • Salt to taste
 

CREAMY BUTTERNUT PENNE WITH FETA

  • 250g SPAR Penne Pasta
  • 1 batch of cooked SPAR freshline Butternut Soup
  • 1 cup (250ml) SPAR cream
  • Big pinch chilli flakes, or to taste
  • 1 round (50g) SPAR feta, crumbled
  • Handful of SPAR freshline basil

Recipe Method

BUTTERNUT SOUP

  1. Prepare the soup mix according to the packaging instruction, using water or chicken stock.
  2. Add the juice of 2 oranges and cook until the veggies are soft and tender.
  3. To make the croutons, cut the bun into cubes and toss in a little salt and olive oil.
  4. Toast in an airfryer or under the grill until golden brown and crunchy.
  5. Serve 1 portion of the soup chunky, dolloped with sour cream and crispy croutons.
 
 

CREAMY BUTTERNUT PENNE WITH FETA

  1. Cook the penne in salted water until al dente.
  2. Drain and set aside.
  3. Blitz the soup with a hand blender until smooth.
  4. Add in the cream and chilli flakes and bring to the boil.
  5. Toss the penne through and serve immediately with crumbled feta and basil.
