Butternut Dip Recipe

Roasted butternut, cinnamon, chickpeas and tahini combine to create a hummus like dip with extra flavour. Serve with chips or crackers.

Recipe Ingredients

  • 400g SPAR Freshline butternut, roasted
  • 1/3 cup SPAR olive oil and 1 tablespoon SPAR olive oil
  • 1 SPAR Freshline lemon, juice & rind
  • 1/4 tsp cinnamon
  • 1 SPAR Freshline garlic cloves, peeled
  • 1/4 cup tahini
  • 1/2 tsp salt
  • 1 400g can chickpeas, drained
  • Salt & pepper, to taste
  • 1 tablespoon roughly torn SPAR Freshline thyme leaves

Recipe Method

  1. In a food processor blend together the 1/3 cup of olive oil, lemon juice, rind, cinnamon, garlic, tahini, and salt until smooth.
  2. While the processor is running, add the chickpeas, 1/2 cup at a time, until smooth.
  3. Check seasoning and add salt & pepper to taste.
  4. Add the butternut and blend until completely smooth.
  5. Place the dip into a small serving bowl and use the back of the spoon to create an indent in the centre.
  6. Pour over the 1 tablespoon of olive oil and garnish with thyme.
  7. Sprinkle with a dash of extra salt and pepper.
