Veggie Vibe Wrap Recipe
Smashed butternut and feta with hummus, caramelised onions and greens with toasted sunflower seeds for extra protein and crunch!
Recipe Ingredients
- 2 cups (300g) cubed SPAR freshline butternut
- 3 tbsp (45ml) SPAR olive oil
- 1 cup hummus
- 2 SPAR freshline onions, finely sliced
- 4 SPAR Bakery Wraps
- 2 rounds SPAR feta
- ½ SPAR freshline cucumber, sliced
- 2 cups of SPAR freshline lettuce, shredded
- ¼ cup of toasted SPAR sunflower seeds
Recipe Method
- Toss the butternut in 2 tablespoons of the oil and season well.
- Roast in a 180ºC oven for 30 minutes, remove and lightly smash the cubes.
- Mix with the hummus and set aside.
- In the meantime, fry the onions in the remaining oil for 8 – 10 minutes or until soft and caramelised.
- Spread the hummus over the wraps and top with the caramelised onions, feta, cucumber, lettuce and sunflower seeds and roll up.

Warm each wrap in a microwave just before using to make them soft and pliable.
