Veggie Vibe Wrap Recipe

Smashed butternut and feta with hummus, caramelised onions and greens with toasted sunflower seeds for extra protein and crunch!

Recipe Ingredients

  • 2 cups (300g) cubed SPAR freshline butternut
  • 3 tbsp (45ml) SPAR olive oil
  • 1 cup hummus
  • 2 SPAR freshline onions, finely sliced
  • 4 SPAR Bakery Wraps
  • 2 rounds SPAR feta
  • ½ SPAR freshline cucumber, sliced
  • 2 cups of SPAR freshline lettuce, shredded
  • ¼ cup of toasted SPAR sunflower seeds

Recipe Method

  1. Toss the butternut in 2 tablespoons of the oil and season well.
  2. Roast in a 180ºC oven for 30 minutes, remove and lightly smash the cubes.
  3. Mix with the hummus and set aside.
  4. In the meantime, fry the onions in the remaining oil for 8 – 10 minutes or until soft and caramelised.
  5. Spread the hummus over the wraps and top with the caramelised onions, feta, cucumber, lettuce and sunflower seeds and roll up.

Warm each wrap in a microwave just before using to make them soft and pliable.
