Banana and Apple Fritters with Rooibos Custard Recipe

Deep fried, golden and crispy banana and apple fritters are a perfect end to a shared meal. Serve with vanilla ice cream or a Rooibos infused custard for dipping.

Recipe Ingredients

  • 2 SPAR freshline Apples OR 4 SPAR freshline Bananas
  • 750ml SPAR vegetable oil for frying
  • 1 cup (150g) of SPAR Self Raising Flour
  • ¼ tsp of SPAR Bicarbonate of Soda
  • ½ tsp of cinnamon (cardamom for the bananas)
  • ½ tsp of ground ginger
  • 1 cup of ice-cold soda water 

Rooibos Custard Dipping Sauce

  • 4 SPAR Rooibos Teabags
  • ½ cup boiling water
  • ¼ cup of SPAR Milk (hot)
  • 500ml SPAR Custard

Recipe Method

  1. Core and cut the apples into thick rounds OR slice the bananas into 3.
  2. Heat the oil over a medium high heat.
  3. Mix the flour, bicarb and spices together.
  4. Whisk in the soda water.
  5. Dip a third of the apples (or bananas) into the batter and immediately fry until golden brown and crispy.
  6. Drain on paper towel and repeat with balance of apples/bananas.

 To make the Custard

  1. Heat the milk and water together, add the teabags and steep.
  2. Add a ¼ to ½ cup to the custard depending on your taste

Serve with SPAR Vanilla Ice Cream or Rooibos custard dipping sauce.
