Banana and Apple Fritters with Rooibos Custard Recipe
Deep fried, golden and crispy banana and apple fritters are a perfect end to a shared meal. Serve with vanilla ice cream or a Rooibos infused custard for dipping.
Recipe Ingredients
- 2 SPAR freshline Apples OR 4 SPAR freshline Bananas
- 750ml SPAR vegetable oil for frying
- 1 cup (150g) of SPAR Self Raising Flour
- ¼ tsp of SPAR Bicarbonate of Soda
- ½ tsp of cinnamon (cardamom for the bananas)
- ½ tsp of ground ginger
- 1 cup of ice-cold soda water
Rooibos Custard Dipping Sauce
- 4 SPAR Rooibos Teabags
- ½ cup boiling water
- ¼ cup of SPAR Milk (hot)
- 500ml SPAR Custard
Recipe Method
- Core and cut the apples into thick rounds OR slice the bananas into 3.
- Heat the oil over a medium high heat.
- Mix the flour, bicarb and spices together.
- Whisk in the soda water.
- Dip a third of the apples (or bananas) into the batter and immediately fry until golden brown and crispy.
- Drain on paper towel and repeat with balance of apples/bananas.
To make the Custard
- Heat the milk and water together, add the teabags and steep.
- Add a ¼ to ½ cup to the custard depending on your taste
Hints & Tips
Serve with SPAR Vanilla Ice Cream or Rooibos custard dipping sauce.
