Avocado Stuffed Piquanté Peppers Recipe
Piquanté peppers make perfect bite size tapas, but if they are not available, small coloured peppers can be used.

Recipe Ingredients
- 1-2 SPAR Freshline avocados (depending on size)
- 1 SPAR Freshline clove garlic, crushed
- Pinch onion salt
- Pinch herb salt
- Juice and zest of ½ small SPAR Freshline lemon
- 1 jar (about 20) piquanté peppers, drained
- Fresh SPAR Freshline coriander to garnish
- Marinated olives to serve
- Avocado oil to serve
Recipe Method
- Peel and stone the avocado. In a bowl mash the avocado with the garlic and seasoning, add the lemon juice and zest.
- Pat the piquanté peppers with kitchen towel and lay flat on a plate facing upwards.
- To fill the peppers, place the avocado mixture in a sandwich bag and snip off one corner. Pipe the filling into peppers, and garnish with fresh coriander.
- Serve with marinated olives and a drizzle of avocado oil
