Avocado Stuffed Piquanté Peppers Recipe

Piquanté peppers make perfect bite size tapas, but if they are not available, small coloured peppers can be used.

Recipe Ingredients

  • 1-2 SPAR Freshline avocados (depending on size)
  • 1 SPAR Freshline clove garlic, crushed
  • Pinch onion salt
  • Pinch herb salt
  • Juice and zest of ½ small SPAR Freshline lemon
  • 1 jar (about 20) piquanté peppers, drained
  • Fresh SPAR Freshline coriander to garnish
  • Marinated olives to serve
  • Avocado oil to serve 

Recipe Method

  1. Peel and stone the avocado. In a bowl mash the avocado with the garlic and seasoning, add the lemon juice and zest.
  2. Pat the piquanté peppers with kitchen towel and lay flat on a plate facing upwards.
  3. To fill the peppers, place the avocado mixture in a sandwich bag and snip off one corner. Pipe the filling into peppers, and garnish with fresh coriander.
  4. Serve with marinated olives and a drizzle of avocado oil
