Apple Pecan Ginger Crumble
Who knew that something so delicious could be so easy? A delicious, comforting winter dessert that is so simple to prepare.
Apple Pecan Ginger Crumble

  • Serves: 4

Ingredients

  • 60 g butter
  • ¼ cup (45 g) soft brown sugar
  • ¼ tsp baking powder
  • 1/3 cup (55 g) cake flour
  • 40 ml corn flour
  • ½ tsp ground ginger
  • ½ tsp ground cinnamon
  • ¼ tsp ground all spice
  • 2 tbsp large flaked oats
  • 50 g pecan nuts, roughly chopped
Filling:
  • 385 g unsweetened tinned pie apples
  • 1 tsp finely grated fresh ginger
  • 25 g soft brown sugar
  • 1 tbsp brandy (optional)
  • Vanilla ice cream, to serve

Method

  1. Combine the butter, sugar, baking powder, flours, spices, oats and pecans until mixed but crumbly. Set aside.
  2. Make the filling by tossing the apples, ginger, brown sugar and brandy together.
  3. Spread in the base of a medium-sized ovenproof pan or 20cm baking dish.
  4. Sprinkle the crumble topping over and bake at 180°C for 25-30 minutes or until golden brown.
  5. Serve warm with vanilla ice cream.
