Pink Salad
A Pink Salad, in celebration of a healthy, balanced life.
Pink Salad

Ingredients

  • 200g SPAR Norwegian Smoked Salmon 
  • 2 SPAR Freshline Ruby Grapefruits
  • 30 ml SPAR Olive Oil
  • 30 ml Red Wine Vinegar
  • 5 ml Dijon Mustard
  • 50g SPAR Roasted Cashew Nuts, unsalted
  • 150g SPAR Freshline Rocket or Salad Leaves
  • 1 small SPAR Freshline Red Onion, sliced
  • 30 ml Pomegranate Seeds

Method

  1. Cut the salmon into strips.
  2. Segment the grapefruit over a large bowl to catch the juice.  Add the oil, mustard, salad leaves, nuts and salmon pieces.  Toss gently to combine.
  3. Divide between serving platters and sprinkle with pomegranate seeds.
Recommended Wine: Enjoy with an easy drinking Olive Brook Pinot Noir / Chardonnay 2012.
