Flour-free Bacon, Cheese and Herb Muffins
Delicious ‘muffins’ that are great for breakfast and for lunch boxes.
Flour-free Bacon, Cheese and Herb Muffins
  • Prep Time: 15 minutes  Cooking Time: 20-25 minutes
  • Serves: 6

Ingredients

  • 15ml SPAR Choice Butter
  • 6 rashers SPAR Butchers Choice Bacon (or Ham), chopped
  • 1 small SPAR Freshline Red Onion, chopped
  • 6 SPAR Extra Large Eggs
  • 100ml SPAR Cream
  • 30ml Freshly Chopped Herbs of your choice (chives used in image)
  • 200ml SPAR Cheddar Cheese, grated

Method

  1. Preheat the oven to 180 °C. 
  2. Melt the butter and fry the bacon until crispy. Remove from the pan and fry the onion until soft.
  3. Combine the eggs, cream and herbs. Season to taste.
  4. Stir in the cheese, bacon and onion.
  5. Pour the mixture into a greased 6 cup muffin tray.
  6. Bake for 20-25 minutes until set.
Cook’s Note:
This recipe makes 6 large ‘muffins’. You can also make 12 smaller ‘muffins’ by using a 12 cup muffin tin.
 
  • When storing eggs, leave in their packaging and keep in fridge. The egg carton helps prevent water loss and also minimises the absorption of fridge flavours.
