Cauliflower Fritters

Cauliflower Fritters
These are a great low carb side dish. They are a great substitute for toasted bread, and you can serve them with eggs for breakfast or as side for any protein dish.
Cauliflower Fritters
  • Prep Time: 15 minutes  Cooking Time: 6-10 minutes
  • Serves: 12

Ingredients

  • 1 SPAR Freshline Cauliflower (625g)
  • 30ml Ground Almonds/Almond flour
  • SPAR Ground Black Pepper
  • 3 SPAR Eggs, lightly beaten
  • 1 SPAR Freshline Onion, peeled and finely chopped
  • 60ml SPAR Choice Butter

Method

  1. Separate the cauliflower into small florets and place them in boiling water. Simmer for 5-10 minutes until just soft.
  2. Drain very well. Chop finely and put aside.
  3. Place the almond flour, pepper and egg into a bowl and mix well, then stir in the onion and chopped cauliflower.
  4. Heat the butter in a frying pan and drop rounded tablespoons of the mixture into the pan.
  5. Sauté the fritters for 3 minutes on each side or until brown. Pat with paper towel and serve.
Cook’s note:
You can keep these in the fridge and warm them up on a flat sandwich toaster or frying pan when needed.
  • Ground almonds can also be called almond flour in some recipes. Although you can purchase ground almonds you can make your own using a coffee grinder or processor to grind them down.
