Spinach and Feta Chicken Pasta Recipe

This is a sure standby for those rushed evenings that requires a quick meal that still delivers on nutrition and taste!

Recipe Ingredients

  • 250g SPAR pasta of choice, cooked al dente (shells/screws/spirals) 
  • 10ml SPAR sunflower oil
  • 1 onion, chopped
  • 2ml SPAR Freshline crushed garlic
  • 370g SPAR Tender and Tasty chicken fillet strips
  • 5ml chicken spice (optional)
  • 10ml  dried sage
  • 5ml dried thyme
  • 0.5ml ground black pepper
  • 300g packet SPAR Freshline spinach, stalks removed
  • 150g reduced fat, feta cheese


Recipe Method

  1. Sauté onion in heated oil until translucent in a pot. Add garlic and sauté briefly.
  2. Add chicken strips and brown all over. Add chicken spice (optional), herbs and pepper.
  3. Add the spinach and cook out the moisture, being careful to not overcook it.
  4. Add in the cooked pasta and allow to heat through. Roughly crumble the feta over the meal.
  5. Serve immediately while the cheese is still soft and gooey



Hints & Tips

  • If you are using fresh spinach, remember to remove the leaves from the stalks by simply running a sharp knife down each side of the central spine. Rinse well, pat dry and roughly chop.
  • When the spinach starts losing its bright green colour then you know that it’s reached its maximum cooking time.
  • 80g SPAR Freshline sundried tomatoes (roughly chopped) and/or a pouch of SPAR black mission olives can be included with the feta to add new flavours, texture and colour to the dish.
  • Stir in 125g SPAR fat free smooth cottage cheese just before serving to create an optional creamy sauce with no fat!
