A serrated bread knife works best for the neatest cutting of the fresh Swiss roll. Never place jelly into a freezer to hurry up the process, as this will destroy its setting ability and your filling will not firm up later on. Candy-coated chocolate sweets, eg Smarties and Astros, although colourful, are not a good choice for a moist dessert such as this one, as their colour coating bleeds into the filling and spoils the appearance.
