Mama’s Aubergines Recipe

Just like mama used to make, if mama was Italian! A rich and satisfying vegetarian dish, dripping with cheese and a double dose of garlic.

Recipe Ingredients

For the tomato sauce:

  • extra virgin olive oil
  • 2 cloves garlic, cut into chunks
  • 1 can Italian tomatoes, chopped or peeled
  • salt
  • a pinch of dried parsley
  • a pinch of dried basil

For the aubergines:

  • extra virgin olive oil
  • 1 clove of garlic, cut into large chunks
  • 1 aubergine, cut into 1 cm slices
  • Fior Di Latte cheese (mozzarella), cut into cubes
  • Grana Padano cheese, grated
 

Recipe Method

Preheat the oven to 200/220˚C.

To make the sauce:

  1. Heat extra virgin olive oil in a pan and lightly fry garlic.
  2. Once garlic is golden, add the canned tomatoes. Add salt to taste.
  3. Simmer for about 20 minutes then add the herbs.

To make the aubergines:

  1. Heat extra virgin olive oil in a pan and lightly fry the garlic.
  2. Once garlic is golden, turn off heat and take out garlic.
  3. Use garlic-infused oil to brush the aubergine slices, then grill or pan-fry them.
  4. Place cooked aubergines on an ovenproof dish. Spoon warm tomato sauce over each
  5. slice and scatter with Fior Di Latte cubes.
  6. Cook in the oven until the cheese has melted.
  7. Before serving, sprinkle with Grana Padano and roughly chopped parsley and basil.
