Green Banana, Butternut and Chickpea Curry Recipe

Feast on the delicate flavours of butternut, chick pea and green banana, simmered in a spiced coconut sauce.

Recipe Ingredients

  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 tbls butter
  • 1 tbls oil
  • 1 tbls grated ginger
  • 1-2 star anise
  • 6 curry leaves
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric powder
  • 1 chilli, seeds removed and finely chopped (optional)
  • salt and pepper, to taste
  • 2 tomatoes, diced
  • ½ cup water
  • 250g chopped butternut
  • 1 tin coconut milk
  • 1 tin chickpeas
  • 3 green bananas, chopped into chunks
  • fresh coriander, to garnish

Recipe Method

  1. Fry the onion and garlic in the butter and oil until soft. Add the grated ginger, star anise, curry leaves and ground spices. Fry for a minute before adding the chopped tomatoes and water. Add the chopped butternut, and season with salt and pepper. Gently simmer until the butternut is halfway cooked. Add the coconut milk and cook for 5 minutes before adding the chickpeas and chopped banana, cook for a further ten minutes until the banana is tender. Taste and season if needed.
  2. Serve with rice and garnish with fresh coriander.
