Fortune Cookies Recipe

Enjoy a fun baking activity before packing as a Father’s Day gift, or treating Dad to Chinese takeaway dinner to set the scene for enjoying the cookies.

Recipe Ingredients

  • 3 large SPAR eggs, separated 
  • 1 ml  almond essence
  • 45 ml  SPAR full-fat margarine, melted
  • 125 ml  SPAR cake flour (60 g)                   
  • 125 ml  SPAR icing sugar (60 g)

Recipe Method

  1. Draw 3 x 6cm diameter circles on a sheet of greaseproof paper. Turn it over and use to line the baking tray.
  2. Lightly beat the egg whites until very foamy.
  3. Add in the remaining ingredients one at a time, mixing in until smooth.
  4. Set aside for 15 minutes while the oven pre-heats to 180° C with the oven shelf in centre position.  Write your favourite short joke and special gratitude messages to your Dad, on 30 strips of paper, each measuring 5 cm x 1 cm.
  5. Take 2 level teaspoonful’s of mixture per cookie, and smooth out evenly on the baking paper, within each drawn circle.
  6. Bake for 6-8 minutes until the still light golden with a browned edge.
  7. Using a flat-bladed knife, and working quickly, lift each cookie off the baking sheet, and flip it over flat onto your palm.
  8. Position a fortune note strip in the centre, and immediately enclose it by folding the cookie in half.  Fold in half again, over the edge of a bowl to form the typical fortune cookie shape.  Set aside on a cooling rack.
  9. Immediately and quickly, repeat with the other two cookies before they harden too much to work with.  This takes practice, so don’t become disheartened if you have a few cookie flops!  Having your parent or siblings there to help speed up each cookie-folding, really does help.
  10. Repeat this process many times, until your mixture is all used up.

Hints & Tips

  • If you are a bit slow and the third or fourth cookie of a batch are too crisp to fold successfully, return them to the oven for 30 seconds to soften up again for folding.  If unsuccessful, you may need to just enjoy these as flat open cookies.
  • Store fortune cookies in an airtight container for up to 2 days.
  • If you have someone to help you, you can increase the number you bake at a time, to speed up the process of folding.
