Rinse and pat-dry the strawberries with kitchen paper towel before slicing. If you prepare and refrigerate the chilli-chocolate ganache in advance, remember to bring it to room temperature in good time beforehand, to make it easier to spoon out when filling the meringues. It firms up considerably on chilling. Recommended wine: Gewürztraminer, sparkling white wine
