Baby Potato Snackpots Recipe

These tiny, savoury potato pots are great for a quick and economical lunch for kids and can also be served as a cocktail party snack.

Recipe Ingredients

  • SPAR baby potatoes, boiled until tender

Recommended fillings to choose from

  • Chicken & mayonnaise
  • Your favourite flavour SPAR smooth cream cheese eg salmon, boerewors
  • Ready-made Tsatsiki or Hummus
  • Leftover savoury mince from dinner
  • SPAR Creamed Spinach, cooked using on-pack instructions

Recipe Method

  1. Cut off a slice across the top of each warm potato and use later as “lids”.
  2. Using a teaspoon, carefully scoop out a little potato flesh, and mix it into your filling of choice.
  3. Fill the potatoes and top each one with a “lid”.

Hints & Tips

  • Boil the potatoes in advance, and store them in the fridge for warming up and finishing off quickly anytime you need a snack.
  • Use crunchy carrot or celery sticks as edible scoops’ or simply enjoy as finger-food.
